Complex chemicals are found in plants

Phytochemicals rich in antioxidants are often bright in color: Antioxidants protect cells from being damaged by highly reactive free radicals. Plants protect themselves against viruses, bacteria and fungi with phytochemicals. Phytochemicals strengthen our immune system, our blood vessels, fight against tumors, and lower the risk of many long-term diseases.

Over 900 phytochemicals are already known in foods and there may be 100 different phytochemicals in one fruit or vegetable.

Many phytochemicals have anticarcinogenic (anticancer) activity:

1. They slow down the proliferation (division) of cancer cells by disrupting the cell cycle.

2. They induce cell death (cell suicide)

3. They inhibit enzymes that turn harmless substances into carcinogens

4. They induce enzymes that may be associated with carcinogenic molecules, facilitating the rapid elimination of carcinogens.

Phytochemicals are not classified as vitamins at official recommended intake values, but they can have a major impact on health and well-being. We are used to having phytochemicals in our food. For example, the macula of the eye (the area of ​​accurate vision in the retina) is adapted to collect yellow carotenoids lutein and zeaxanthin to protect against harmful blue light. Although the emphasis in this list is on the positive effects of phytochemicals, many phytochemicals can be toxic and harmful. Plants where phytochemicals are most harmful are not considered as food. Plants including oxalic acid must be eaten with milk.
